Abstract


Latar Belakang : Ikan gabus (Channa striata) merupakan ikan air tawar yang paling banyak ditemukan di Sumatera Selatan. Ikan gabus mempuyai kandungan albumin tinggi dan memiliki berbagai fungsi untuk Kesehatan. Ikan gabus berpotensi dikembangkan menjadi sari ikan gabus. Sari ikan gabus dapat digunakan untuk mempercepat proses penyembuhan luka pasca operasi. Tujuan : Menetapkan profil spektra FTIR terbaik dari sari ikan gabus dari variasi metode ekstraksi dan menetapkan perbedaan profil spektra FTIR sari ikan gabus terhadap beberapa variasi metode ekstraksi dengan pembacaan hasil FTIR  yang dianalisis menggunakan kemometrik. Metode : Ekstraksi sari ikan gabus dengan berbagai variasi metode meliputi MAE, wet rendering, steam, dan soxhlet, serta dianalisis FTIR kombinasi analisis data dengan kemometrik multivariat. Hasil : Sampel tiap metode menunjukan profil spektra FTIR yang didapat ada 3 peak utama yang berasal dari vibrasi (O-H), (N-H), dan (O-C-N). Saran : Perlu dilakukan lebih banyak evaluasi terhadap minyak ikan gabus agar mendapatkan minyak ikan yang berkualitas. Perlu dilakukan uji-uji tambahan seperti uji organoleptis, uji stabilitas, dan uji kadar albumin.
